Welcome back, to another edition of “I can’t believe I have to prepare another meal AGAIN,” a series in which I’m making quick and easy meals that still taste good and are good for you! Well, that’s assuming you like fish for this week. That’s right - this week, we’re making easy paleo/low carb poke bowls with canned salmon!

One thing about me is that if there is a fish and rice option available, I will be eating it. But when you’re short on time, rice is not the thing to make. Ditto sushi. Plus, I’m doing a pretty strict version of Paleo right now, so rice isn’t on the menu at ALL. That’s where cauliflower rice comes in. You people are so fucking lucky to live in now time, you don’t even KNOW. Like, when I first started eating Paleo back in 2009, we had to rice our own cauliflower with a food processor. And that, after walking 2 miles to school in the snow!

Caulfilower rice can be found in just about every frozen food section. It’s good to have on hand in a pinch after a busy day of fuck-giving when all you want to do is not give-a-fuck. And poke bowls are actually stupid easy to make since it’s pretty much just an assembly of toppings, especially when you denigrate the entire concept of poke bowls and make it with cooked fish.

 
 

We’ve talked about fish in a can before - I know it’s not particularly appetizing. But if you can find canned wild caught salmon or tuna, you can make a variety of quick and easy meals while also getting the enormous benefit that comes from wild-caught cold-water fish. It’s super high in protein and of course all the health hyphenated omegas. We’re lucky enough to get incredibly fresh, canned wild-caught salmon at our farmer’s market, but you can also find some great options at the grocery store if you’re unable to farmer’s market.

For the most part, this dinner is just a matter of assembly. I mean, you can even skip the peach mayo sauce I’ve included and just use Kewpie mayo, or no mayo and a drizzle of soy sauce and fish sauce. I do think the peach mayo sauce ties everything together really well, so if you’ve got the 3 minutes to spare, I’d encourage you to go for it. You can swap peach for mango, by the way. I just used peach since I didn’t have mango on hand. Likewise, feel free to get creative with your toppings. I didn’t have avocado, but that would be another great addition. I didn’t add edamame since it’s not paleo, but that’s a good one too! You basically don’t even need me at this point. GO FORTH: PALEO-KE BOWL YOUR HEART OUT!

Cooked Salmon Paleo-ke Bowls

Ingredients

Canned Salmon Paleo-ke Bowl
Peach Mayo

Instructions

Make the Mayo
  1. Dump all the ingredients into a small blender or food processor and pulse until the peach has fully liquified in the sauce. Drizzle on top of poke bowl before serving.
Assemble the bowl
  1. Microwave the cauliflower rice per the instructions.
  2. Top with all the ingredients and drizzle with the peach mayo. Can be eaten warm or room temp.
